In Groningen, Drenthe and Overijssel people eat flat, crispy waffles during the last days of December. On New Year’s Day the same waffles are presented as rolls.
The underlying idea is that in December the old year is completely unfolded while on New Year’s Day the roll symbolizes the unknown new year with all its secrets.
